Nikolaihof in Wachau – World Heritage

„Nikolaihof“ in the Wachau, built on ancient Roman foundations, takes pride in offering only biologically cultivated wine in their tasting halls. True wine lovers enjoy tasting here. The Rieslings and Grüner Veltliners lie in the vineyard’s cellar. But also wine of the Weissburgunder, Neuburger and Chardonnay grapes. The vineyard’s architecture is mainly Gothic and dates from the 15th century. The Roman look is still apparent in the cellars. The historic winepress is no longer used, but the wooden casks are. The Saahs family, owner of the vineyard, presses the wine without chemical additives and lets the wine mature in oaks casks which contain 2000 and 12000 litres. Most of the casks are made from oak or acacia. The making of the casks is an age-old profession. Nowadays there are not many barrel-makers or coopers left. The tricks of the trade are explained in the wine museum. The former workshop stands as it originally looked. Hardly anything has been changed. Officially designated by UNESCO as World Heritage Site, this site is to be safeguarded for the future as a testimony to its enduring past.
