Making a Vido del Vida Chianti with Joe (pt 2)

In this part of my Vino del Vida Chianti series, we pick up two weeks later and being the fining and stabilizing process. We add our sulphites, sorbate, and de-gas the wine with a stainless steel mix-stir in preparation for bottling.
